Springs are not adjustable unless you want to change to the lowering ones in the Spring and the stock ones in the Fall.  If you want to adjust your ride, you would need air shocks or bags...I'm just saying.

or you could go with coilovers

from what you say you want, i think coilovers are the way to go.  you can just adjust the springs when you switch your snow tires on and off

I've heard that coil overs make your ride rough. Is this true?

No it is not true. 
I understand it's possible to find coilovers that don't tighten up the ride, but from my reading, that's the exception, not the rule.  How do you find a set that will give a near OE ride?

No it is not true.

Spring rate you have to figure out what is needed and go from there.

how would i go about finding this?

a manufacturer might list the spring rate on their site, or if you call them, and you can find out the oem spring rate...somewhere lol.  then just compare them
